Ghost Crab

 
 
We came up with the name before we came up with the drink so using the collective supply on hand we came up with this:
 
2oz Tres Agaves Tequila
1/2 oz Cointreau
Freshly squeezed lime juice
White of an egg
Shake in a tumbler with strain into glass over ice.

Optional: To enjoy when the sun goes down pour into a plastic cup, get a flashlight and bring the kids to the beach to look for ghost crabs. Ah yes, we love summer.

Blue Tang



This easy concoction was revisited this week while we're in the Outer Banks with family and (after much creative input) was renamed after Dory in Nemo.
Perfect freshly showered from the beach while thinking about dinner.

Cuba Libertine

 
There's many a version of the mojito out there and they're all fine drinks but this one is the best! Know why? I replaced the club soda with sparkling wine (and the white rum with a spiced one!). Drinks are always better with sparkling wine.

2 oz. Sailor Jerry spiced rum
2 tbsp. simple syrup
2 tbsp. fresh lime juice
Bunch of mint leaves
Sparking wine (dry)

Muddle the mint with the syrup and juice, add ice and rum and shake. Pour over ice and top off with sparkling wine. Stir and enjoy.

Watermelon Basil Daiquiri

 
Watermelon, so sweet and refreshing and so delicious with rum. I've seen variations of this drink for a while now and I'm sure you can replace the rum with vodka (just don't call it a daiquiri!).

This makes enough for 4 drinks
1/4 good sized watermelon cut into cubes and pureed in blender with 16-20 basil leaves. Strain into mixing jug/shaker
8 oz white rum like Bacardi
4 tbsp. fresh lime juice
4 tbsp. simple syrup


Mix them all up (or shake) and pour over lots of ice. If you were making just one at a time - muddle the watermelon and basil in bottom of shaker, add ice and rest of ingredients and then strain before serving.

Serve with a thin slice of frozen watermelon and basil leaf.

This is what summer tastes like.

Equal parts vodka, Campari and Solerno stirred with ice. An orange twist would be nice.
There is no end to the ways a Negroni can come together.

Salty Lemonade



I still had some of the lemony simple syrup left from here when I saw this and knew I had to give it a try. Salt and tequila and lemons is a winner in our book. As well as being salty it is quite potent (another winner for us!)
3oz tequila (reposado),
1 1/2 oz lemony simple syrup
1 1/2 - 2oz freshly squeezed lemon juice

Shake all together and pour over ice in a salt rimmed glass.


Yesterday I made more simple syrup but added rosemary and lemon peel to the pot - another winner.
Salty Rosemary and I will be at the pool later should anyone care to join us.
