Pink Grapefruit Friday

Temperatures were hitting 100 when we made this (as they will today) and there is no finer refreshing drink on a steamy hot day. Himself found the recipe here and it calls for a beverage called Pink Grapefruit ICE – a flavored water which we couldn’t find but easily substituted with grapefruit flavored Italian soda.
2 oz. vodka
4 oz. chilled Pink Grapefruit Sparkling ICE/grapefruit soda
Splash of lemon
Splash of white cranberry juice
Mix all ingredients and serve in an eight-ounce glass with ice. Toss in a handful of blackberries to garnish.

By the way, for Eamon I added a splash of the grapefruit into the cranberry juice but as sweet as the grapefruit soda was he didn’t think much of the taste. Then I put a flower in my hair, himself and the kid were wearing their Hawaiian shirts and we sat on the balcony and sweated in style. This was so good, we made a second batch and dinner was put off a little longer. Ah, I love Fridays!

Cyclist's Widow

Would you be very disappointed to hear that the first cocktail of the summer was a non-alcoholic one? Well, it kinda started out that way.

1 tablespoon grated ginger
Juice 3-4 limes
4 cups of water (sparkling is good too!)
Sugar (or stevia) to taste

It’s a very refreshing drink and I made it while himself was on the eastern shore for the MS bike ride as most of my company for the weekend was under 9 years of age. It didn’t go down so well with the underage set, sticking to their boxed beverages so I added gin to it and called it a ‘cyclist’s widow’.

By the way we love us some Hendrick's gin and it's likely this was the wrong vehicle for it. It wasn't a bad drink but the gin didn't sing in it.
